WINEMAKING PROCESS
From grape selection to production, we have developed a specific process for [yellow tail] PURE BRIGHT to reduce the calories and alcohol whilst maintaining the great taste and quality [yellow tail] is known and loved for.
LEAF PROTECTION
Our vines are selected and pruned to maximize the leaf protection from our Australian summer sun, protecting the grapes and slowing their development whilst maintaining fruit flavor and intensity.
EARLY AND NIGHT HARVEST
The grapes are picked earlier, while they have a lower natural sugar content, converting to lower alcohol in the wine. We also implement night harvest to keep the grapes cool and crisp in order to maximize the aroma and flavor.
COOLER FERMENTATION
The grapes are run through a cooler fermentation process using specialized yeast to maximize the flavor profile at lower alcohol levels.
THE ART OF BLENDING
Finally, our wines are blended by our expert winemaking team to deliver a balanced, great tasting lower calorie and alcohol wine.
