Greek-Style Turkey Burgers with Tzatziki Sauce

INGREDIENTS
Tzatziki Sauce
½ cup low-fat plain Greek yogurt
¼ cup English cucumber, grated
1 tbsp. chopped fresh dill
2 tsp. fresh lemon juice
½ tsp. garlic powder
½ tsp. salt
1 pinch cayenne pepper
Turkey Burgers
1 lb. ground turkey
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/3 cup red bell pepper, finely chopped
¼ cup red onion, finely chopped
¼ cup scallions, finely chopped
2 tbsp. chopped fresh dill
2 tbsp. olive oil
½ tsp. ground black pepper
4 burger rolls
Arugula or Romaine lettuce leaves
Thinly sliced cucumber
DIRECTIONS
Tzatziki Sauce
Step 1
Combine yogurt, grated cucumber, 1 tablespoon chopped dill, lemon juice, garlic powder, salt and cayenne pepper.
Step 2
Stir until well mixed; cover sauce and refrigerate until serving time.
Turkey Burgers
Step 1
Place ground turkey in large mixing bowl.
Step 2
Add spinach, feta, bell pepper, onion, scallions, 2 tablespoons dill, oil, and black pepper. Mix until well blended.
Step 3
Form turkey mixture into 4 equal-size burgers.
Step 4
Grill burgers over medium heat approximately 6-8 minutes per side, or until they reach an internal temperature of 165° on an instant-read thermometer.
Step 5
Serve burgers on rolls with cucumber slices, lettuce and tzatziki sauce.
