Avocado Toast with Crunchy Fruit-Nut Topping
Enjoy a glass of [yellow tail] PURE BRIGHT Sauvignon Blanc with this sweet and savory avocado toast.
2 tbsp. fresh orange juice
2 tbsp. extra-virgin olive oil
3 tsp. honey
1/8 tsp. salt
½ cup mixed dried fruit (such as cranberries, raisins, currants, chopped apricots or mango)
2 tbsp. slivered almonds, toasted
2 tbsp. unsalted pumpkin seeds or sunflower seeds
1 large or 2 small avocados, thinly sliced
4 slices whole-grain bread, toasted
1 tsp. grated orange zest, optional
Stir together orange juice, olive oil, honey and salt in medium bowl.
Add fruit, nuts and seeds; mix well. Let rest for 10 minutes for flavors to absorb.
Evenly divide avocado slices among the toasted bread slices. Top with fruit mixture.
Sprinkle with grated orange zest.
