Lemon-Rosemary Grilled Chicken with Summer Corn Relish

INGREDIENTS

Lemon-Rosemary Grilled Chicken

⅓ cup olive oil
Zest of 1 lemon
2 tbsp. fresh lemon juice
1 tbsp. honey
4 cloves garlic, minced
3 large sprigs fresh rosemary
¾ tsp. salt
½ teaspoon pepper
4 skinless boneless chicken breasts (about 6 ounces each)

Summer Corn Relish

4 ears corn, husks and silk removed
1 tbsp. melted butter
Salt and pepper
3 tbsp. thinly sliced green onion
2 tbsp. chopped fresh parsley
2 tbsp. thinly sliced fresh basil
1 tbsp. white wine
1 tsp. jalapeno (seeded and minced)
1 tsp. olive oil

DIRECTIONS

Lemon-Rosemary Grilled Chicken

Step 1
In a large resealable plastic bag, mix olive oil, lemon zest, lemon juice, honey, garlic, rosemary, salt and pepper.

Step 2
Add chicken to bag; seal and place in refrigerator.  Marinate chicken 3-4 hours or overnight.

Step 3
Preheat grill to medium high. Oil grill grates. Place chicken on grill and cook, covered, for 4-5 minutes.

Step 4
Turn chicken and continue to cook, covered, for another 4-5 minutes or until chicken reaches an internal temperature of 165° on an instant read thermometer.

Summer Corn Relish

Step 1
Preheat grill to medium high. Oil grill grates. Place chicken on grill and cook, covered, for 4-5 minutes.

Step 2
Turn corn using tongs.

Step 3
Brush corn with melted butter and season with salt and pepper.

Step 4
Grill corn 4 minutes longer, then remove from heat. Cool completely.

Step 5
Carefully cut corn kernels from cobs; place kernels in medium bowl.

Step 6
Add remaining ingredients and mix well.

Step 7
Spoon relish over grilled chicken.
